TENDERLOIN FROM THE BARREL is a product made from the leanest pork loin. It is pickled using the traditional brine method. It is left for at least 6 days in brine. It is laced with bay leaves. Smoked over beech and alder wood. It is characterised by its low fat content and high protein level, hence it is perfect as part of a balanced diet. It is ideal as a filling for sandwiches, but can also be consumed as a cold snack.
